The Yanez Lentil & Mushroom Tacos
We are such a fan of this recipe that we created the Mexican version of it. We usually try to add our little Latin flair to any recipe and this one works perfectly. Here is the recipe:
LENTIL + MUSHROOM TACOS
Serves 2 (about 6 tacos)
mushrooms & lentils
- 1 1/2 Tbsp. extra virgin olive oil
- 1/4 of a red onion, sliced
- 6 oz. portabella or button mushrooms, sliced
- 3/4 cup cooked lentils
- 4 tsp. soyrizo
- sea salt + pepper
- small tortillas
- 1-2 super ripe avocados
- cotija or panela cheese
- micro greens, for garnish
- chipotle sauce for spice
