Our Pop Addiction has come to a new low. We cannot go to ViVa Pops everyday!!! Although their pops are seasonal, organic and beyond delicious is not healthy for our wallet. So we started to look for recipes that remind us of the traditional ice pops or Paletas from México. In Tijuana you can find the La Michoacana's Stores full of fruity goodness almost ion every corner. There you can find fresh fruit waters (aguas frescas), milkshakes (malteadas), ice cream (nieves/raspados) and of course ice pops (paletas). Here and here are some good recipes!! Here is my favorite Margarita Ice Pop recipe:

Margarita Ice Pops

For this clever riff on the "frozen" Margarita, try to use natural lime pops (sold at natural and specialty foods stores) rather than artificially colored and flavored varieties. 6 Servings

Ingredients

  • 1/2 cup tequila
  • 6 tablespoons fresh lime juice
  • 1/4 cup coarse kosher salt
  • 6 frozen lime-flavored ice pops or fruit bars, unwrapped

Preparation

  • Mix tequila and lime juice in 1-cup measuring cup. Place coarse salt in small bowl. Place all ice pops, sticks up, in deep bowl, or place 1 pop in each of 6 glasses. Pour tequila mixture over ice pops. Lightly dip 1 edge of each ice pop into coarse salt and serve.
